This deliciously simple sugar free gut loving fruit jelly is good…..really good. I have tried it with a range of fruits and so far they have all turned out yummy. Some flavours I have tried are Peach, apple, apple and mango and plum. I was trying to find ways to use up surplus fruit before it went bad and I instantly thought of trying to whip up some jelly. The best thing is it’s delicious and good for you.

For those of you (like me!) that aren’t too keen on the taste that gelatine can sometimes have in a completed dish then this is the recipe for you.

Why is this jelly gut ♥ loving??

1 Fibre

Using the whole fruit means all the fibre is included in the jelly and not in the bin (or compost) as it would be if we used just the juice. This is good for your gut in a number of ways. As we all know fibre helps keep our digestive systems healthy.

This gut ♥loving contains two types of fibre. The fruit itself is a form of soluble fibrewhich helps to slow the emptying process in our stomachs, which helps you feel fuller. It also helps to lower cholesterol and stabilise your blood glucose levels. Besides fruit, other sources of soluble fibre are vegetables, oats, barley and legumes.

Soluble Fibre is also a prebiotic, a non-digestible food ingredient that promotes the growth of beneficial microorganisms in the intestines. Simply put the more food, or prebiotics, that our beneficial microbiota have to eat, the more efficiently these live bacteria work and the healthier your gut will be.

Another type of fibre in this gut ♥loving jelly is found in the peach skin, insoluble fibre. I was being lazy leaving it on to save time in preparation, but its good for you too, bonus (but maybe not inedible skins though, mango and banana skins probably won’t taste too good). This type of fibre absorbs water to help to soften the contents of our bowels and support regular bowel movements. It also helps to keep us full and keep the gastrointestinal environment healthy.

2 Gelatine

Good Grass fed beef gelatine does wonders for our bodies. Gelatine is a type of protein derived from collagen and is a great source of amino acids, the ‘building blocks’ of protein, which support a healthy mood, strong bones, smooth skin and proper muscle synthesis (great for gym junkies). It is important to get gelatin from the grass fed/ pastured animals to avoid hormones, pesticides and heavy metal contamination.

Gelatine has many health benefits including improving heart, gut and skin health, maintaining strong bones, protect joints and lowers joint pain, lift mood and cognitive ability, helps improve sleep quality and helps keep you feeling full.

Agar agar could be substituted if you are plant based, vegetarian or vegan, but I am not sure if it would be a straight swap for the gelatine or if you would need to tweak the amounts.

Gut-Loving-Fruit-Jelly

Sugar Free Gut Loving Fruit Jelly

Prep Time: 10 minutes
Cook Time: 10 minutes
Additional Time: 4 hours
Total Time: 4 hours 20 minutes

This deliciously simple sugar free gut loving fruit jelly is good, works awesome with a wide range of fruits and is a great way to use up excess fruit and reduce food waste

Ingredients

  • 500g Fruit
  • Juice of 1 Lime
  • 2 x 1/3 cup water
  • 2 Tbsp Grass Fed Gelatine
  • (Sweeter of choice if required, I only use if the fruit if too tart on its own)

Instructions

Conventional Method

  1. Place 1/3 cup of cold water in a bowl and sprinkle with the gelatine and leave to “bloom” while you prepare the fruit.
  2. Remove any pips from the fruit (and skin if needed) and chop roughly
  3. Place fruit in a pot with the lime juice and 1/3 cup water
  4. Cook until soft
  5. Puree using a stick blender
  6. Add bloomed gelatine and mix until all dissolved
  7. Pour into desired container and refrigerate until set

Thermomix

  1. Place 1/3 cup of cold water in a bowl and sprinkle with the gelatine and leave to “bloom” while you prepare the fruit.
  2. Remove any pips from the fruit (and skin if needed)
  3. Place fruit in thermomix bowl with the lime juice and water and blend speed 6 20sec
  4. Cook 10 minutes 100C speed 2
  5. Puree, slowly increase to speed 9 for 1 minute
  6. Add bloomed gelatine and mix speed 2 for 30 seconds until all dissolved
  7. Pour into desired container and refrigerate until set

Notes

  • This is quite a firm jelly as I wanted to be able to cut it into cubes to allow my baby to feed herself. If you like a softer jelly just add more water.
  • Freezer friendly. Perfect for keeping long term and reducing waste and allows you to just defrost what you need when you need it.
